Copycat DoubleTree cookies
Recipe from Six Vegan Sisters.
Makes 12 big cookies
Ingredients
- 45 mL plant milk + 1/4 tsp apple cider vinegar
- 1 tsp vanilla extract
- 1 stick (113 g) plant butter, slightly softened
- 80 g white sugar
- 80 g light brown sugar
- 156 g all-purpose flour
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/8 tsp cinnamon
- 20 g traditional rolled oats
- 140 g vegan chocolate chips
- 80 g chopped walnuts
Instructions
- Preheat the oven to 300 degrees F.
- In a small bowl, stir together the plant milk, vinegar, and vanilla. Set aside.
- In a large bowl, cream the plant butter and sugars until light and fluffy.
- Add the milk mixture, beating again until light and fluffy.
- Dry ingredients: In a separate bowl, sift the flour. Stir in the baking soda, salt, cinnamon, oats, chocolate chips, and walnuts.
- Add the dry ingredients to the butter mixture. Mix until combined.
- Line a baking sheet with parchment paper. Scoop out 1/4 cup of dough for each cookie. Roll into balls, and put on the baking sheet.
- Bake for 20 minutes until the edges are golden brown.
